What a great way to go to work and have the sweet smell of roasted pepper to look forward to. Don’t get me wrong, roasting pepper for Mediano’s Salsas is a lot of hard work. But without the roasted taste, our Texas salsas would not be the same. I constantly look forward to the day we cook the roasted peppers, knowing that once we are done—a new beginning for many jars of Mediano’s Texas Salsas are on their way to be born for salsa lovers all over the country.
Salsa made with the tops of green onions furnishes vitamin A.
Peppers, which taste so sweet when roasted, can be used in so many ways. Meat will not be missed. At least for a few days.
Here are some other tasty locations to place your roasted peppers:
• Sandwiches with cheddar cheese, mustard and red onion.
• Salads.
• Paninis filled with sautéed Swiss chard and Gruyère.
• Pasta or pasta salad.
• On pizza.
• In omelets.
• As a dip when coarsely puréed with feta and parsley.
• Quiche.
• A savory, summer tart.
